  • What you need:

    • 4 tbsp butter  
    • 4 green onions, chopped  
    • 450 g green peas (fresh or frozen)  
    • 600 ml vegetable broth  
    • 3 tbsp fresh mint, chopped  
    • 600 ml milk  
    • Salt and freshly ground black pepper, to taste  
    • A pinch of sugar (optional)  
    • 120 ml light whipping cream  
    • Fresh mint sprigs for garnish  
    • Additional water for desired consistency 
  • How to do it:

    1. Melt butter: In a large saucepan over low heat, melt the butter.  
    2. Cook onions: Add spring onions and cook until they are soft but not browned.  
    3. Add peas and liquids: Incorporate the peas, vegetable broth, chopped mint, and a splash of water if a thinner soup is desired. Bring to a boil, then simmer covered for about 30 minutes (or 15 minutes if using frozen peas).  
    4. Reserve some peas: Before blending, set aside a few tablespoons of peas for garnish.  
    5. Blend the soup: Puree the soup with milk in a blender until smooth. Adjust thickness with additional water if necessary.  
    6. Chill: Season with salt, pepper, and sugar. Cool to room temperature and refrigerate.  
    7. Serve: Serve chilled, topped with a swirl of cream, reserved peas, and a mint sprig.
