Autumn Tea

Fresh mandarin juice gives this tea a bright autumn twist. A little clove and cinnamon make it fragrant and warming. Vitamin C contributes to the normal function of the immune system. Black tea flavonoids have been linked in human trials to improved endothelial function. Use tangerines if you prefer a tangier finish and sweeten with honey only if you need it.

  • What you need:

    • 4 to 5 mandarins or tangerines
    • Water equal to the volume of mandarin juice
    • 1 to 2 cloves
    • 1 small cinnamon stick
    • 1 teaspoon pure black tea
    • Honey optional
  • How to do it:

    1. Squeeze the mandarins and measure the juice.
    2. Add the same volume of water to a small saucepan.
    3. Add the cloves and cinnamon.
    4. Bring to a gentle boil over low to medium heat then remove from the heat. Add a bit of water.
    5. Add the tea leaves and steep 5 to 10 minutes to taste.
    6. Strain into cups.
    7. Sweeten with honey if you like.
